Chocolate Sphere Mold, Silicone, Set of 2
Chocolate spheres look impressive, but rigid plastic molds make them hard to get out. You tap, you twist, and half the shells crack. A silicone sphere mold is much more forgiving: you just peel it back and the chocolate pops out whole.
You get two flexible blue silicone trays. Each has six half-sphere cavities about 6 cm (2.36 in) wide, so you can make 12 halves at once, or six full spheres. Smooth, glossy chocolate shells that release without cracking.
What to make with it
- Hot chocolate bombs: fill two halves with cocoa mix and mini marshmallows, seal them together and drop one into hot milk.
- Chocolate bombe desserts: fill a shell with mousse and cake, then pour warm sauce over it at the table.
- Mousse domes and panna cotta.
- Ice cream domes, gelatin desserts and fruit gummies.
- Mini cakes and muffins, since the silicone can go in the oven.
How to make chocolate shells
- Melt and temper your chocolate, or use candy melts.
- Spoon chocolate into each cavity and brush it up the sides in an even layer.
- Chill for a few minutes, then add a second coat so the shells are strong.
- Chill again until firm, then gently peel the silicone back to release each half.
Thin spots at the rim are where shells crack, so build up that edge with the second coat.
