Expert Tips for Scaling Recipes
- Leavening agents (baking powder, baking soda) — don't scale 1:1. Use only 1.5× when doubling. Too much causes metallic taste and collapse.
- Salt — the scaler gives the math-correct amount, but taste and adjust. Palates vary.
- Cook time — doubling a recipe rarely doubles cook time. For baked goods, check 5–10 min early.
- Pan size — doubling requires roughly double the pan surface area, not a taller pan.
- Strong spices (cayenne, cloves, nutmeg) — when scaling 3× or more, start at 75% of the scaled amount and adjust.
- Eggs — can't split a whole egg. Round to nearest whole, or use egg weight (1 large egg ≈ 50g) for precision.
