Expert Tips for Scaling Recipes

  • Leavening agents (baking powder, baking soda) — don't scale 1:1. Use only 1.5× when doubling. Too much causes metallic taste and collapse.
  • Salt — the scaler gives the math-correct amount, but taste and adjust. Palates vary.
  • Cook time — doubling a recipe rarely doubles cook time. For baked goods, check 5–10 min early.
  • Pan size — doubling requires roughly double the pan surface area, not a taller pan.
  • Strong spices (cayenne, cloves, nutmeg) — when scaling 3× or more, start at 75% of the scaled amount and adjust.
  • Eggs — can't split a whole egg. Round to nearest whole, or use egg weight (1 large egg ≈ 50g) for precision.

Frequently Asked Questions

How do I scale a recipe from 4 servings to 6?
Enter 4 in Original Servings and 6 in Target Servings — the scaling factor is 1.5×. Every ingredient multiplies by 1.5 automatically. You can also use the Paste mode: paste the ingredient list from any recipe site, set your servings, and click Scale.
Can I paste a recipe directly into the scaler?
Yes — that's what Paste Recipe mode is for. Copy the ingredient list from any recipe website or cookbook and paste it into the text box. The tool automatically parses amounts, units (cups, tbsp, tsp, oz, grams, etc.), and ingredient names. It understands fractions (1/2, 1/4), mixed numbers (1 1/4 cups), and metric amounts (200g).
How do I double a recipe?
Use the ×2 quick-multiply button — it automatically sets the scaling factor to 2 based on your original servings. Then click Scale Recipe. Every ingredient doubles, with smart fraction rounding (so 3/4 cup becomes 1 1/2 cups, not 1.5 cups).
Should baking powder be doubled when I double a recipe?
No — use only 1.5× to 1.75× the amount of leavening agents when doubling. Too much baking powder causes a bitter, metallic taste and makes baked goods rise then collapse. The scaler gives the mathematically correct amount, but always adjust leavening manually.
Does cook time also scale with the recipe?
No — cook time does not scale proportionally. Doubling a recipe requires roughly the same oven temperature and similar (not double) cook time. For baked goods in a larger pan, add 5–10 minutes and check doneness with a toothpick. For stovetop dishes, time depends on heat and reduction, not quantity alone.
What is a recipe scaling factor?
A scaling factor is the multiplier applied to every ingredient. It equals Target Servings ÷ Original Servings. A factor of 2 doubles the recipe; 0.5 halves it; 1.5 scales from 4 to 6 servings. This tool shows the scaling factor prominently so you always know the ratio before you start cooking.
