This chicken fricassee is a great solution for a spontaneous afternoon meal. The chicken things get a fantastic flavor from the variety of vegetables. When using a slow cooker, the chicken things get the vegetables aroma and you get an easy special meal .
This chicken fricassee recipe is so easy to make. The fricassee can be served with rice, or serve it as a stew with a salad.
Ingredients
1.5 tablespoon olive oil
2 pounds chicken thighs with skin
Salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1 cup chicken stock
1 big onion
2 carrots
1/2 teaspoon dried leaf thyme
Instructions:
Peel the onion and carrots with a julienne vegetable peeler. Slice them into cubes with a vegetable slicer. Heat the olive oil in a skillet over medium-high heat. Lightly sprinkle the chicken things with salt, paprika and pepper and place them in the skillet with the skin-side down. Fry them shortly for about 5 minutes until they get a golden color. Flip the things over and cook for 2 minutes longer.
Add the chicken to the slow cooker and place them skin-side up.
Add the onion, carrots and thyme to the skillet and fry over high heat for 3 minutes. Pour the onion mixture over the chicken. Cook for about 2 hours on high heat.
Remove the chicken thighs to a plate.You can serve it asside rice or or serve it as a stew with a salad.
