How to Store Chocolate:

Once you have melted the chocolate, you need to pour it in a pastry bag or a squeeze bottle. There are several pasty bags and squeezers for chocolates and you can get the one that you like.

Before you start filling the chocolate into the mold, we highly recommend using a disposable pastry bag to easily fill the chocolate molds. You can also use a spoon, but in most cases it will leave excess chocolate on the edges that you’ll need to remove with a paring knife. Now you squeeze the melted chocolate in the cavity of the chocolate mold. First, fill each cavity of the candy mold with melted chocolate.  Make sure you do not squeeze chocolate all over the mold. You just need to do it in the center. Don’t move the pasty bag all around the mold. Just keep it focused on the center and when the mold fills ¾ portion; stop squeezing.  Now hold the mold and tap it lightly and the chocolate will spread evenly in the mold. The tapping makes sure that your mold doesn’t create bubbles on the surface. Fill all of the cavities and tap the tray down gently onto your workspace to release air bubbles and bring them to the top.

Next, place the chocolate molds in the refrigerator; chocolate usually takes 15 to 20 minutes to set in the fridge and harden. Smaller chocolate molds may take around 10-15 minutes.

Release the Chocolates from the Mold

 After taking the chocolate mold from the refrigerator,  check the bottom of the mold. If it is it white and cloudy, your chocolate candy is hardened and has started to pull away from the mold, and it’s ready to release. If it still looks wet, the chocolate may need some more time to harden. Once hardened, carefully flip the chocolate mold over onto a paper towel. Keep the mold close to the work surface and give it a little tap if they won’t release right away. If you have trouble getting chocolate to release from molds, you can place it in the freezer for up to 3 minutes.
